Consumption of poultry meat has dramatically increased in the last several decades to become the most consumed meat per capita. The goals of our poultry group at Texas Tech University are

  • to conduct research in poultry processing and value added meats to improve yield and consumer satisfaction for processors.
  • to improve the quality of poultry meat and value added products for the consumer.
